Next Course: “From Leaf to Superfood: Biotechnological Valorization of Amazonian Plants”, May 2026

Apply for a scholarship to participate in the course coordinated by Dr. Ery Fukushima at Universidad San Francisco de Quito, Ecuador

This 10-day training course introduces participants to the complete biotechnological pipeline for transforming Amazonian plant resources into value‑added functional products. Using cacao leaves from both cultivated and native varieties as a model system, the course guides participants from field collection in the Amazon to laboratory processing, extraction of bioactive compounds, functional food formulation, and nutraceutical evaluation. The training emphasizes sustainable and responsible use of biodiversity and aligns with national and international bioeconomy strategies.

The course is intended for undergraduate and graduate students in biotechnology, food science, and environmental sciences, as well as researchers, laboratory technicians, agroindustry professionals, and entrepreneurs interested in plant‑based innovation and bioresource valorization. Preference may be given to applicants whose work relates to Amazonian plant resources or who come from underrepresented areas of the Amazon region.

Participants will gain field experience in collecting cacao leaves in Amazonian farms and will learn preprocessing techniques including drying, grinding, and lyophilization of plant material. They will be trained in green extraction methods such as the use of natural deep eutectic solvents (NADES), as well as optional fermentation steps to enhance extract functionality. They will also participate in the formulation of chocolate prototypes incorporating plant extracts.

The course provides hands‑on laboratory instruction in proximate composition analysis, antioxidant capacity assays such as DPPH and ABTS, and in vitro antioxidant activity testing using human fibroblasts. Participants will interpret biochemical data, evaluate the nutraceutical potential of their formulations, and prepare final reports and presentations based on their results.

The program includes theoretical lectures on plant biotechnology, green extraction technologies, bioeconomy, and functional foods, combined with fieldwork, laboratory practice, group activities, and a final presentation and certificate ceremony.
