Myrthe Frissen is an environmental health physician and public health resident with expertise in risk assessments, healthy dietary patterns, and the impacts of global food systems on human and planetary health.

Myrthe Frissen holds a bachelor’s degree in Liberal Arts and Sciences and a master’s degree in Clinical Medicine and Translational Research from Utrecht University. She has conducted research in the gut microbiome and endocrinology in Brazil, Portugal, and Italy, before returning to the Netherlands to work as a physician in internal and emergency medicine. She later specialised in public health, with a particular focus on environmental determinants of health and the health impacts of human activities on the planet.

She is the founder of the Rotterdam-based foundation Vegetables Without Borders (2017), which addresses food waste and social isolation while promoting a transition towards plant-based proteins. She also served as a founding board member of the Physicians Association for Nutrition (PAN) – The Netherlands (2019–2024), which educates healthcare professionals on the health benefits of sustainable and nutritious diets. Since 2025, she has been chair of Harvest Care, a foundation that connects soil health with human health through nutrition and works to link the agricultural and healthcare sectors in building an agri-health network across Europe.

Her work focuses on the intersections between environmental exposures, nutrition, and sustainable food systems.
