Each year this initiative provides training for five researchers from developing countries in the Asia-Pacific region in food science and nutrition-related research. The initiative has been supported by the Kirin Brewery Company since 1993. The training programme is organized annually at the National Food Research Institute (NFRI) in Tsukuba, Japan where the fellows familiarize themselves with the latest techniques and methodologies, applying them to a research project with direct relevance to their work at their home institutions. The main thrust of this activity, which will build on the earlier UNU efforts in food fermentation, will be enhanced scientific understanding leading to improve traditional fermentation technologies. Through competitive solicitation of research proposals, engaging support from the Kirin Brewery Company for UNU fellows’ follow-up research, a network will be built to promote research.
